This junmai-shu is brewed using the same dewasanzan and yamada-nishiki rice grains as Nakano’s signature junmai-shu, which gives the sake the same delicate balance of umami, tartness and fruity notes.

All Guiberteau’s whites are pressed as bunches and ferment with indigenous yeasts. Historically, this wine has been vinified entirely in tank, although more recent vintages have been partly aged in tronconique oak and used barrels to broaden the textural range and mitigate reduction. It strikes the palate with laser-guided confit lemon and kaffir lime, with mouth watering acidity cutting through the wine’s sleek texture like a hot knife through butter. Closing with the quivering, chalky length typical of the region’s top whites, it’s a thrilling Saumur blanc; we bought every bottle we could. Lovers of fine Riesling and white Burgundy should jump on this.

Colour Amber Light 

Nose Heather, honey, vanilla spices, gentle peat 

Palate There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg. Gentle NZ peat smoke and chocolate. 

Finish Medium-long, dried fruit, chocolate.

For this Wijnbergperzik, we macerated vineyard peaches for about four months on three- and four-year old lambik. Two thirds of the lambikken have been brewed by Brouwerij 3 Fonteinen, one third by Lindemans. The oldest lambik has been brewed in October 2019. This renders the weighted average age to more than 33 months. The final fruit proportion is 388 grams of Moesel-grown and hand-picked peaches per litre of Wijnbergperzik

6% ABV

For this Kweepeer, quinces were macerated for over six months on both two and three year-old lambik. It was then blended with some very young lambik for continued bottle fermentation.

Lambikken originate from five different barrels and seven different brews, brewed by both Lindemans (30%) and 3 Fonteinen. Of the cereals used in the 3 Fonteinen brews, a quarter was sourced from their own Pajottenland cereal collective. The weighted average age of the blend upon bottling was more than 40 months.

No addition of juices, syrups, or artificial sweeteners.  Unfiltered. Unpasteurised.
