Brewed 100% with the rich yet complex bizen-omachi rice, also known as "the phantom sake rice" for its scarceness and difficulty to grow. The result is an elegant ginjō, juicy and full of umami, balanced with moderate tartness and an extra long and crisp finish.

Nakano Ultra Super-dry Junmai

This junmai-shu measures +17.8 on the Japanese sake scale making it super-dry at face value. However, it carries an umami that blooms in the mouth, giving the sake a gentler flavour profile. A sake that showcases both the true umami of rice, alongside a very clean finish.

Nigori (cloudy) junmai sake 720ml

Nigori (cloudy, coarse filtered) sake, which holds back on the usual sweetness of nigori sake. This makes it more sessionable and pairable with food, while keeping all of the full-bodied goodness, umami and fresh rice aroma.

Pair with more robust flavours or umami rich dishes like soy sauce based dishes, teriyaki, Pacific oysters, carbonara, risotto or paella.

Serve chilled or at wine cellar temperature.

Tasting notes
Light yellow gold in colour with a fine persistent bead. Aromas of white peach, lemon citrus and crisp green apple. Notes of baked bread and ginger spice on the nose with a subtle nutty character. On the palate a crisp acidity is balanced with creamy textures held up by a concentrated long finish. Extra Brut in style, this very dry Methode Traditionelle is best enjoyed as an aperitif or to accompany an Entree course.

Clone 95 Chardonnay
Hand harvested as whole bunches from the Korokipo region of the Hawke?s Bay
Picked on the 6th of March 2019 at 18.6 Brix, 11.0g/L Titratable Acidity, PH 3.16.

Winemaking
Whole bunch pressed to extract no more than 580L/tonne.
Inoculated with a yeast isolate from Champagne.
Fermented and aged in both Stainless steel vats and Oak Barriques.
Full Malolactic fermentation. The base wine is assembled and tirage bottled 8 months from harvest.

Tasting notes
Pale golden in colour with a fine perlage. Aromas of toasted oats, rock melon and nuances of tropical fruits leading to a warm honeycomb finish in the glass. On the palate the yeast autolytic evolution unfolds with the fine acid backbone to reveal a complex mineral finish. Extra Brut in style, this very dry Methode Traditionelle is best enjoyed as an aperitif or to accompany an Entree course.

Hand harvested as whole bunches from the Lower Wairau plains of Marlborough.
Picked on the 18 of March 2020 at 17.5 Brix, 13g/L Titratable Acidity, PH 2.9.

Winemaking
Whole bunch pressed to extract no more than 580L/tonne.
Inoculated with a yeast isolate from Champagne.
Fermented and aged in both Stainless steel vats and Oak Barriques.

No more than 60 casks will make up each batch. Each cask is selected for the notes it will bring to the whisky. Each batch will have a unique code and shows the cask breakdown which enables the recipient, each year, to contrast, compare and explore the different notes that the wood and blending brings to this Islay Scotch Whisky. #01-2023 uses the cask selection to create layers of sweetness, zest intertwined with the classic smoke of Islay.

TASTING NOTES

Bursts of zesty citrus and black pepper, evolving to toasted bread, marmalade, and smoke. On the palate, it’s fresh with salt, lime, and spices, while the finish lingers with spice, smoke, and toffee-like richness.

NON CHILL–FILTERED | NO ADDED COLOURING

Bottled exclusively for New Zealand by the talented team at Whisky Galore. Distilled from heavily peated barley, this peated spirit (known by its 'codename' as Staoisha) has matured in a cask that has been given a process of de-charring and re-charring to maximize the development and extraction of flavour from the wood.

On the nose, a rich and oily scent of toasted peanuts surrounded by thick peat smoke and a medicinal quality of old first-aid kits (bandages and antiseptic) and salted-caramel. To taste, there is sweet, malty chocolate biscuits joining a tang of salt & vinegar chips, before a surge of rich peat smoke carried on a highly viscous mouthfeel.”

Creating positive change in the New Zealand brewing industry. The Good Fight, a series of collaborative brews, with all profits going towards building educational resources for New Zealand breweries. For this year's Good Fight brew, we have teamed up with our friends at 8 Wired. We have brewed a hazy NZ hopped IPA featuring Moutere, Riwaka and late harvest Nelson Sauvin, fermented with Tropicale yeast strain. This hop combo gives aromas of orange, passionfruit, nectarine with a hint of dankness for good measure. We played with the malt bill, using a pinch of darker malts to give the beer a 'sundown hue'.

This big US IPA weighs in at 7.2%, propped full of 3 of the ‘Heavy-Weights’ of the Hop world; Mosaic, Simcoe to deliver citrus, pine, dank, resinous, stonefruit flavour, & wack a big portion of Azacca into that to help with a balance of mango & tropical fruits.
