Aged in fresh Chardonnay barrels for 24 months this unique Saison has undergone a gentle secondary fermentation from Dandelion & Nettle flora harvested from the meadow beside our brewery. Rich, oaky nuances blend with earthy, floral and herbal notes.

This complex BA Saison has rested in fresh Chenin oak for 24 months and is full of dry, woody character with layers of crisp white grape, honeyed floral notes, and a subtle vinous complexity.

An Imperial Stout aged in Highland Whisky barrels for 12 months. Rich chocolate and dark roast malts merge with underlying soft berry fruits and light oak. Imparting a classical Highland whisky character to this lavish stout.

Shadowy, foreboding and mysterious...describes many a winter's night on the Dark Peak. It also captures the essence of the Black IPA, with six types of malt to give it a black opaqueness and almost caramel sweetness, all balanced out with a defined piney bitterness from the Pacific Northwest hop combo of Centennial and Cascade

Brewed 100% with the rich yet complex bizen-omachi rice, also known as "the phantom sake rice" for its scarceness and difficulty to grow. The result is an elegant ginjō, juicy and full of umami, balanced with moderate tartness and an extra long and crisp finish.

As this is a nama sake it needs to be kept refrigerated.
