Neon Haze Hazy IPA 6.5%

For decades, the Neon Cowboy has tipped his hat over Auckland, watching late-night antics, questionable dance moves, and epic yarns. He’s seen it all—love, heartbreak, and that one guy who tried to ride a shopping trolley home. Now, he’s got his own hazy IPA. Packed with El Dorado, Cascade, and Citra hops, it shines bright with tropical swagger and a citrusy wink. Saddle up, partner!

Neon Haze is a luminous burst of flavor, a hazy IPA inspired by one of Auckland’s most iconic neon relics—the vintage cowboy sign that once adorned the Keans Building on Queen Street. Now glowing in its second life at the Epic Taproom in Onehunga, this legendary sign embodies the electric vibrance of the city's past, much like this hazy IPA captures the bold and bright essence of modern hop-forward styles. Neon Haze pours a radiant, golden haze, swirling with a rich, pillowy body that carries the unmistakable aroma of ripe tropical fruit and candied citrus.

Crafted with El Dorado hops, this IPA delivers an intense rush of juicy pineapple, stone fruit, and sweet pear, balanced by a smooth, velvety mouthfeel. It’s a beer that bridges past and present—just as the neon cowboy once signaled adventure on Queen Street and now lights up Onehunga, Neon Haze brings a fresh, glowing energy to every pint. Winemaking Philosophy
The Arneis vineyards used for this selection are cultivated on loose soils with a strong presence of silica and a particular microclimate, which can give wines aromatic and elegant.

The grapes are picked by hand and the harvest is followed by cold maceration with soft pressing. The must then undergoes temperature controlled fermentation at 16-18 °C for about 10 days. The last important phase for this wine is a short period of bottle ageing, in order to develop its structure and pleasant bouquet.

Colour: clear straw yellow.
Bouquet: complex, intensely fruity with attractive notes of vanilla, face powder and candyfloss.
Palate: well balanced and elegant. The finish shows notes of peach and honey.

A big and intense wine with aromas and flavours of plum, dark cherry and dried dark fruits.

Murgian rocky hill within the territory of Gioia del Colle, in the locality of Spinomarino, 4,5 km to the South East of the town. Karstic rocky soil, omogeneous mix of clay and limestone

Spontaneous fermentation of the must in contact with the skin for 240-300 hours at controlled temperature and just with autochthonous yeasts. Open-cycle process with frequent pumping of the must over the pomace. Natural malolactic fermentation. No addition of sulphites during the whole vinification process.  Only after the end of the malolactic, re-integration of the sulphites lost during the vinification steps to restore the initial natural value.

Ageing:
12 months in wine stainless steel tanks, 12 months in Slavonic oak 750-liter-casks with the application of music therapy to optimize the spontaneous microxigenation process and improve the fining of the wine, 6 months in bottle.

Ruby red intense colour with slight burgundy hues. Scent typical of very ripe fruits and slightly toasted wood and spices, with some balsamic notes. Full bodied, rich in minerality and freshness, balanced smooth taste of black sour cherry and plum tending to velvety with ripe fruity notes of blackberry and mulberry, and spices like clove and cacao. The feature that makes our natural authentic Primitivo of Gioia del Colle unique is the toasted almond aftertaste.

A mainstay of the Melbourne beer scene, Melbourne bitter is a smooth and refreshing bitter that is always at the affordable end of the market.

Aotearoa Series #61 | Brave Brewing Co IPA

The Sawmill Aotearoa series is about celebrating the best of New Zealand! 

This month we teamed up with Brave Brewing Co to celebrate what they do best - bold brilliant IPAs. It’s a meeting of minds, brewed with respect and a whole lot of hops. 

NZH-106, Nelson Sauvin and Kohatu hops give this IPA passionfruit, tropical and a winey aroma. A clean, crisp flavour with a full-bodied fruity finish. 

Here’s to New Zealand brewers, standing behind every good beer.

Carlton Draught is a pale lager with a unique resinous hop character, that can best be described as providing the perfect balance between being full flavoured and thirst quenching. Carlton Draught delivers an uncomplicated beer, with broad taste appeal typical of a classic Australian lager style beer.

Carlton Dry is clean filtered for a refreshingly crisp, dry lager. Low in bitterness, it delivers superior drinkability from the first sip to the last.

Is a robustly flavored ale made with top fermentation ale yeast. The beer is lightly hopped and black malt gives it darker color. The fruity ale-like esters blend well with the subtle hoppiness and hints of coffee/chocolate to deliver a unique beer

Tooheys Extra Dry is well known for its clean, refreshing taste. Its crisp, dry finish is achieved by an extended fermentation, ensuring minimal residual fermentable sugars. Wonderful fruity, malty notes accompany a mellow middle palate, leaving a clean aftertaste.

A classic English-style old ale, we forgo the holiday spices in favor of a robust, dry-hopped ale featuring a malty richness balanced with a complex hop profile. Hearty and warming in character, when winter approaches, it’s time for Hibernation.

This ain’t your average NZIPA—it’s a neo-classic, dialled up with a double dry-hop punch. Deep gold and brilliantly clear, Tsunami Warning delivers a full-force blast of ripe stonefruit, led by luscious apricot vibes, thanks to a high-impact hop combo of Rakau, Nectaron, and the experimental Clayton CIP014.

Biotransformation works its magic, amping up the juiciness while keeping the malt backbone sturdy but stealthy. At 6.6% ABV, it’s dangerously smooth—one sip and you’re already caught in the undertow.

Latvian brewery Ārpus has quested all the way to New Zealand to personally select their favourite home-grown hops. Here, they joined forces with yours-truly to collaborate on a hazy India pale ale that highlights the best in bloom. This "mega pick" features Riwaka, Nectaron, and Superdelic – a zesty, tropical and confectionery combination that proudly showcases our hop gardens through the Latvian palate.
