Cassis de Dijon must be made from fresh fruit, while cassis from other provenances must also be made with fruit juices, concentrates, aromas etc. In addition, berries from countries outside France must not be used.
The quality of Cassis de Dijon also depends on various important factors: the quality and integrity of the whole fresh fruit, the types of berries used, the level of the Fruit content, the know-how and the cellar techniques of the producer Cassissée (16% vol.) is made exclusively from whole, freshly harvested black currants.
