To moderate the sourness, Boon Brewery only brews Lambic in the 7 cold months, from early October until April, according to the traditional "turbid mash" system. This Lambic beer is brewed from 40% unmalted wheat, 60% of barleymalt, aged hops and wild yeasts collected from our coolship and is aged for 1, 2 or 3 years in oak casks. The blend, a mild average 18 months old Lambic (unsweetened, unfiltered, unpasteurised) is refermented in the bottle and can be stored up to 20 years. Brewed in Lembeek, the village that gave Lambic its name. Awards at the World Beer Championships: 2008 Gold, 2010 Silver, 2012 Gold Medal.

This year the Grande Réserve fermented on wooden Brandy barrels surprises us with a rich combination of flavors. On first encounter, aromas of ripe dried fruits such as raisins and dates bring a warm invitation to the nose mixed with a subtle hint of caramel.
On the palate, the velvety texture of caramel and dried fruit is blended with toasted hazelnut. The presence of tannins adds a pleasing structure, while a touch of bitterness perfectly balances the alcohol. A warming finish remains, inviting further experience.

“This blond, top-fermented and naturally hazy abbey beer surprises on various levels. For one, the balance between the bitter and the sweet flavours is simply magnificent, as is its bouquet, which contains magical flavours such as banana, peach, ripe pineapple and a variety of spices, which subtly combine coriander and orange. To obtain an even more pronounced flavour, pour it into the glass at an angle, so as to mix in the sediment at the bottom of the bottle. Unit price perSt-Feuillien Quadruple is a very dark and dense beer. She is noticeably alcoholic. She distinguishes herself by a complex and finely caramelized aroma and with shades of Madeira wine and candied fruit and an intense touch of fermentation esters (banana type). A slight hoppy smell (English style) completes the whole. The mouth is long with a powerful body built on the density and generous apparent extract. The bitterness is present but sweet and blends harmoniously with the malty structure. The selection of special malts raises the chocolate side with the nuances of coconut. The saturation is average.
