Commercial Description

Taittinger Brut Réserve is a blend of Chardonnay (40%), Pinot Noir and Pinot Meunier (60%) wines from over 35 different vineyards and vintages matured to perfection. 

This high proportion of Chardonnay, unique among fine non-vintage champagnes, and a minimum ageing of three years in the cellars, where it reaches the peak of aromatic maturity, makes Taittinger Brut Reserve a delicately balanced champagne, known for its consistently excellent quality all over the world.

Taittinger considers it an honour to produce a Brut champagne every year without exception. The brilliant body is golden yellow in colour. The bubbles are fine, while the foam is discreet yet lingering. The nose, very open and expressive, delivers aromas of fruit and brioche. it also gives off the fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. The entry onto the palate is lively, fresh and in total harmony. This is a delicate wine with flavours of fresh fruit and honey. 

Taittinger Brut Reserve, which acquires its maturity during three and four years ageing in the cellar, offers excellent aromatic potential. Madeira is a wine and the name of the Portuguese island it comes from, 1000 kilometres south west of Portugal, off the coast of Africa. The soils here are volcanic and the climate has a high rainfall. Wines made here were historically shipped in barrels in the hills of ships where the heat baked (maderised) them, hence the name Madeira came into being. Today the wines are baked in the wineries to emulate the style. This one is medium sweet with rich flavours of caramel, dried apricots, walnuts and spice. Fresh acidity adds balance and this is an ideal Madeira for cooking with or sipping lightly chilled.

Moët Impérial is one of the biggest volume champagnes in the world from the vast house of LVMH (Louis Vuitton Moët Hennessey) and is typically a blend of 30 to 40% Pinot Noir, 30 to 40% Pinot Meunier with 20 to 30% Chardonnay for balancing crispness and freshness. It's made from Moët & Chandon's vineyards in all of the five main grapegrowing areas in the Champagne region.

Elegant and refined with a backbone of pristine fruit and balanced acidity, this finely concentrated Chardonnay has a lovely freshness and finesse and will become more complex as it evolves over time. It is drinking well now, and will develop beautifully over 5-7 years.

VINEYARDS
Old vine Mendoza Chardonnay was sourced from two sites in Hawke’s Bay.
The Mangatahi site is inland and elevated and later ripening, while Bridge Pa
ripens Chardonnay beautifully with their red metal soils.
Low yielding vines, open canopy management, managed irrigation and Sustainable
Winegrowing NZ farmed were common to both sites. The Mendoza clone with their
typical hen and chicken bunches produced fruit of great intensity and balance,
and structured acidity. This Chardonnay was hand harvested and cooled overnight.

WINEMAKING
The cooled bunches were hand sorted then whole bunched pressed. The majority of
juice was cold settled then racked to barrel. Fermentation was in new and seasoned
French oak, with selected cultured yeast and indigenous yeast, for added complexity.
A combination of 500L puncheons and 225L barriques were employed. Lees stirring
post fermentation was regular and malolactic fermentation was completed in barrel.
The Chardonnay matured in barrel for 9 months before blending and bottling.

TASTING NOTE
An elegant Chardonnay which focuses on the beautiful structure so evident in this
grape variety. Pristine fruit and balanced acidity are the backbone, enhanced with
seamless texture and mouthfeel. Citrus notes, particularly grapefruit pith abound, gracefully supported by sweet French oak.

Paulaner Weissbier is hazy dark golden with a white head. Fruity, spicy sweet aromas of clove and over ripe bananas. Silky smooth mouthfeel. Good flavour strikes a balance between ripe bananas, sweet pale malt grist, clove, with a tart wheat taste to finish. 

5.5% ABV

Top of the range Taittinger Champagne. Very pale yellow colour with fine, light bubbles. On the nose, a complex combination of tangerine, ripe fruit and raisin pastries. On the palate, rich, with flavours of grapefruit and liqourice. The Comte Blanc de Blancs promises excellent potential for ageing.
