The 2023 Vintage Stout is the fifth release of our ‘Vintage’ range of yearly Barrel Aged releases.
This Imperial Stout was brewed with a ‘Reiterated’ Double Mashing schedule, in which the second mash is mixed in with high gravity Wort from the first mash. This process allows us to extract a more concentrated sweet Wort, which feeds the yeast to create a higher alcohol brew.
A small addition of dextrose sugar in the fermenter added an extra hit of alcohol which gives this beer a warming balance to the oak tannins. We then decanted the beer into New Zealand Whisky Barrels from Pōkeno Distillery, and left the beer to rest for nine months.
The process of Oak ageing creates a chemical reaction between the wood and the beer, in which flavour compounds such as tannins and vanillins leach into the beer, creating a rounded and complex flavour. By treating the oak barrel as an additional ‘ingredient’ we’ve been able to create this complex and rich brew that is perfect for winter nights, and will also cellar extremely well as it gains complexity with ageing.

Production
Common practice in the Côtes du Rhône is to bottle the best cuvées as a single, named, village wine and the rest as more basic Côtes du Rhône Villages. Boutinot’s philosophy, on the other hand, is to start with the intention of making the very best Côtes du Rhône Villages possible by sourcing wine from the vineyards of named villages, and enriching them with a small proportion of barrel-aged wine from Sablet and Séguret. Boutinot's Côtes du Rhône Villages 'Les Coteaux' is therefore a selection of the best Grenache Noir and Syrah from some of the 17 named Côtes du Rhône Villages. We source wine from a number of growers with exceptional terroir and so have the flexibility to select only the very best fruit each vintage (rejecting parcels which do not meet our high standards). Mostly unoaked, a small proportion (15%) is part-aged for up to 20 months in a few new, but mostly older, oak barrels to bring depth and subtle notes of complexity.
Tasting notes
Immediately impressive, this wine reveals its class from the start. Brambly fruit underpinned by subtle oaky nuances, lovely sweet spice - warm star anise with a touch of cinnamon. This classic Côtes du Rhône Villages is enriched with specially-selected parcels from Séguret and Sablet.
Food match
A delicious accompaniment to hearty food: grilled meats, meaty sausages with mash or, as would be served in France, with puy lentils; shepherd's pie, mushroom ragoût or simply a good pizza.

Unit price perThis is the second release of this Chardonnay, following on from a micro release in 2024. Situated on the chalky hillside of this tiny North Canterbury single vineyard, the Chardonnay vines work hard in the prevailing warm winds. Each task is performed in the vineyard with quality in mind and the work is lovingly done by hand throughout the season. Hand picked at the end of March, whilst the vines were enjoying a prolonged period of dry Autumn weather. Gently whole-bunch pressed, with the new juice going into French oak barrels for a natural fermentation over the following months. Aged for 10 months and bottled without fining.

Unit price perThe "Ba-Ne" is a blend of the two top red grape varieties of Piedmont: Barbera and Nebbiolo. They work together wonderfully in a blend, Nebbiolo bringing high acidity, bold tannins, and elegance. The Barbera provides a richer body, and full plump fruit.

Casa Vinicola Abbazia winery is located in Santo Stefano Belbo, a small town between Langhe Monferrato and Roero in Piedmont, Northwestern Italy. The winery was established in 1848, adjacent to an ancient Abbey built in 1028, in honour of Saint Gaudentius, the hermit saint who, around the 6th century, retired to the surrounding mountains to live a life of silence and prayer.
