That tune, that song... often the emotions that find us out are too strong, the nostalgia sneaks up on us too quickly. You used to listen to that song with your folks… and now you aren’t with them, or they are simply not around anymore. Your memory feeds back sensations and feelings that the encaged present cannot capture; it is incapable of rationalising. But they occur, and they are the ones who will take your place, and in your honour that same melody, that same music, becomes a masterpiece of man’s ingenuity, capable of transcending the future and moving closer to those indescribable moments of infinity and eternity.
In the same way this blend was born with the precise intent of enabling those who are getting to know us what past we have been capable of bringing about and at the same time to remind those who know us well who we are now and that this is what we wish to be. 

Listen: the backing track of an iconic Speyside distillery marries up perfectly with a great grain, arranging an aromatic bouquet worthy of a solo in the spotlight. A slow ouverture, but now bursts of ripe fruit, hay, lawn and petrichor. In the mouth majestic, warm and harmonious: we are back among the flavours of grandma’s kitchen: her sweet baking, her slightly, perfectly burnt mostaccioli biscuits.

Ten labels would not be sufficient. Protagoras, Socrates, Anaxagoras, and all the great figures of ancient Greece were orchestrated by Pericles, the city's architect par excellence. They created the perfect polis that inspired love from every corner of the known world, although it also provoked hate from some. May Zeus grant me the opportunity to take vengeance upon the Athenians! With these words, Darius ordered one of his servants to repeat the phrase "Master, remember Athens" three times during each banquet.

Here we present a blend of single malt and grain whiskies aged in sherry oak casks, originating from various city-states of Scotland and their distilleries. We have chosen the title "Architectus" to provoke those who dare to taste this blend, marked by impertinence and hubris. It is agile, simple, and clear, crafted by carefully selecting the finest elements. Upon nosing, it delivers a shocking aroma, fruity and delicate. On the palate, it offers a magnificent combination of flowers, sweet fruits, dried fruits, toasted nuts, cereals, and sweet spices. The fragrance of the Scottish fields gracefully merges with the mischievous sherry notes, creating a seamless and majestic experience that unfolds towards the southern horizon. Enhanced by a gentle summer glow, we find ourselves immersed in its captivating aroma as the sun slowly descends beyond the hills. Who knows how long it will take for such a remarkable alignment of eminent humans to occur again? It seems that even two thousand years have not been enough.

An unusual young man appeared at Verrocchio's workshop one day in 1469, expressing his desire to learn and assist. Teacher and student relationships have always influenced emotions, passion, literature, and more. Aristotle and Alexander serve as a sufficient example. To educate means to bring forth. In today's information-saturated world, amidst all the noise, such a connection becomes vital. We embark on a new journey as we focus on nurturing young emerging talents, whom we shall refer to as apprentices. After exploring various options, we finally settled on Speyside. The aim is to grasp, learn, comprehend, understand, and acquire the essence of what stimulates the human intellect. Every dedicated student cherishes their mentor, but it should be reciprocated. This young spirit exhibits vibrant and fresh notes, with a malty introduction accompanied by hints of green apple, honey, yellow stone fruit, and a touch of citrus. It possesses liveliness and unpredictability, requiring time to settle down and allow the olfactory impressions to solidify upon savoring. Returning to Verrocchio, after witnessing his apprentice Leonardo's paintings, he never touched a brush again.

Royal Salute was created in 1953 to celebrate the coronation of HRH Queen Elizabeth II. A powerful, sophisticated and opulent blend, aged for a minimum of 21 years, this Scotch whisky is named for the tradition of the 21 Gun Salute that is fired at the Tower of London for Royal celebrations.

Tasting Notes
Taste: Full, deep fruity flavours with a subtle smokiness. The first taste of Royal Salute brings the subtleties of the nose to life. Sumptuous sweet orange marmalade flavours infused with fresh pears burst across the tongue. The second taste brings in a rich medley of spices and a nuttiness of hazelnuts that have a mouth-filling intensity and then the final warmth from hints of masculine smokiness.

Nose: Rich, fruity aromas and sweet fragrance of autumn flowers. Powerful aromas of sweet pears and citrus fruits are balanced with the full fragrance of autumn flowers. Elegant aromas of sweet vanilla and a dry oakiness are enhanced with subtle notes of sherry and smoke.

Cutty Sark blended is made from carefully selected single malt whiskies, predominantly from Speyside, are expertly blended with top quality grain whiskies. It is matured predominantly in American oak casks which impart less colour to the spirit but impart further subtle and complex flavours. Once matured, the malts are blended together. This process is a particular feature of Cutty Sark and ensures the final blend is harmonised and, therefore, consistent in colour and flavour.

A sumptuous malt whisky blend, showcasing whiskies aged in Spanish wine casks. The name is a nod to our founders chance encounter with a man in the South of Spain, where he was introduced to Sherry for the first time. Years later, John was reacquainted with Sherry through whiskies aged in former Sherry casks, known for the rich, deep flavours they provide. It's a style of whisky John has been drawn to ever since.

Aged in American Oak (ex-bourbon) and distilled using peated grain sourced from Inverness – Scotland. This peated single malt expression has a distinctive style all of its own. Peaty characters play on the palate more gingerly than its Scottish peated counterparts. With more restraint, this expression represents the best of new world peated whisky interpretations. The perfect partnership of Hellyers Road Original Single Malt with a pinch of our peated single malt spirit. This whisky delivers a tangy, fruity flavour that lingers delightfully in the aftertaste. Aged in American Oak (ex-bourbon). This whisky is non-chill filtered or artificial colouring added.

It presents as a refreshing, alternative single malt that is most definitely worthy of your attention.

The Hellyers Road 12 Year Old Single Malt Whisky is aged in American white Oak (ex-Bourbon casks) and was first aged statement expression from Hellyers Road Distillery. First released in 2014, it quickly became Australia’s highest-selling, locally crafted single malts.

Highlighting distinctive signature citrus nuances, akin to the most unique distilleries of Scotland, it is fair to say, that no Australian distillery is comparative. The style is a subtle and delicate - the most welcoming whisky for any new enthusiasts

From Starward...

We finished our red-wine-barrel-aged Australian single malt whisky in heavily peated whisky-drenched barrels from Islay, Scotland. And for the first time, you’ll taste coastal, peaty, smoky flavour in our signature fruit-forward whisky.

AROMA / Tropical fruits, toasted oak and a hint of sweet peat.

PALATE / Ripe red berries, coastal peat smoke, yellow peach and cocoa nibs.

FINISH / Oak slowly dries the palate, with a long peated finish.

COLOUR / Sunset gold

This very popular 'Project Starward' was re-released in March 2021. It begins with their award winning Solera single malt, aged in Apera barrels and culminates in a collaboration with Boatrocker Brewery. The result delivers ginger, orange and dark chocolate on the nose, while the palate sees a strong spicy ginger, fresh vanilla and pineapple character balanced by sweet raisins and figs. In short, it's a big whisky with a warming mouthfeel.

Douglas Laing's Rock Island bottles the epitome of the Scottish Islands. The blend marries a plethora of Island whiskies, with malts from Islay, Arran, Orkney and Jura. The whisky has been bottled at a rather specific 46.8% ABV, and of course without colouring or chillfiltration. 

Nose: Wind-swept beaches, coastal peat and a hint of ash, complimented by touches of green fruit.

Palate: Yet more sea breeze, with oat cake crumbs, growing spicy notes of cracked black pepper and a deft whiff of peat smoke. Hints of vanilla here and there.

Finish: Salinity lasts on the finish along with peppery warmth.

Presented in a Darlington crystal decanter, Royal Salute Royal Wedding Edition is a blend of some of the oldest and rarest whiskies from the brand’s collection.

In homage to Markle’s heritage, all liquid in the blend has been fully matured in American oak casks – a first for Pernod Ricard-owned Royal Salute

Just 70 bottles of the special edition have been released, each engraved with an individual number and presented in a handcrafted American oak box. The decanter itself features images of roses, thistles and barley, as well as daffodils and California poppies in tribute to the royal couple.

At the top of the House of Hazelwood range sits the 25 Year Old expression, presented beautifully in a bottle and box inspired by 1920s Art Deco design.

Nose: Pancakes and golden syrup, lime, oak furniture and oodles of vanilla.

Palate: Burnt sugar, cut grass, honey'd cereals. A few pinches of exotic spice.

Finish: Drying and quite oak-y.
