Our Palomino is produced using the grapes from a traditional Spanish varietal planted here on Brakkuil farm back in 1978.
The vineyard at the foot of "Klein Tafelberg" (small Table Mountain) is comprised of limestone rich coastal soil - adding hugely to the Palomino's subtle notes of natural sea salt minerality.
During harvesting, the grapes are pressed and their juices inserted into tanks until primary fermentation has been successfully executed.
It is then when the veil starts its process for a couple of weeks to months. After this process the wine is transferred to French oak barrels and left for 6 to 12 months to reach maturity.

Plantings of this grape declined in the 1990?s in favour of the more expensive, easier to market Barolo and Barberescos. It came down to money, not quality and quietly the wine world mourned. Luckily a few faithful enclaves remained faithful to the grape like in Dogliani just south of Alba.

Unit price perThe 2022 De Boel France Cornas, also known as "Ars Magirica", is a plush red wine from the small Cornas appellation in the Northern Rhone Valley made, of course, from 100% Syrah grapes.
The wine undergoes a two-month natural fermentation in stainless steel, with 40% then moved to old barrique for eight months of aging. The two wines are then blended together and bottled in July, with the wine being released in the October proceeding the vintage.
The wine has a spicy nose of pepper, liquorice and pork fat, leading to a supple palate offering further deep black fruits and gamey notes.

Giacomo Fenocchio's winemaking philosophy
Giacomo Fenocchio is regarded as one of the best Barolo producers today. Here's a piece that sums up why he is so highly respected and what makes his wines an authentic expression of Piemonte as a wine region.
"Claudio Fenocchio took over from his father Giacomo in 1989 – probably the moment of greatest pressure to follow the ‘modern’ winemaking path of short fermentations and aging in new barriques. In fact, it’s difficult now to understand how much pressure was exerted – from peers and neighbors, old and young, from the press, importers, customers, and that mysterious thing called “the market”. It took a strong will to resist, and a strong devotion to tradition. Lucky for us that Claudio stuck with the best of tradition – organic farming, long fermentations, and aging in large Slavonian oak casks. Easy for us too, since we get to drink his wines. Rockford Wines' legacy
Rockford Wines is an icon itself and a relatively new one, established in 1971 by Robert O'Callaghan, who has forged a reputation for preserving winemaking tradition and saving many of the world's oldest grape vines from being pulled up in the Australian Government's vine pull schemes of the 1970s and 1980s.
The Rockford vintage shed houses equipment from 50 to 100 years ago, which was discarded by other wineries as modernisation took over.
