Winemaking Philosophy
The Arneis vineyards used for this selection are cultivated on loose soils with a strong presence of silica and a particular microclimate, which can give wines aromatic and elegant.

The grapes are picked by hand and the harvest is followed by cold maceration with soft pressing. The must then undergoes temperature controlled fermentation at 16-18 °C for about 10 days. The last important phase for this wine is a short period of bottle ageing, in order to develop its structure and pleasant bouquet.

Tasting Notes
Colour: clear straw yellow.
Bouquet: complex, intensely fruity with attractive notes of vanilla, face powder and candyfloss.
Palate: well balanced and elegant. The finish shows notes of peach and honey.

This wine is for us the most refined expression of Tenuta di Carleone. Driven by terroir and will age fantastically!

Tasting Note: 100% Dolcetto from 30 year old vines. Ruby red colour, full and intense nose with florals and lifted red berries. Acidity gives definition, and the wine is appealingly fresh on the palate.

A deep and dense expression of the Montepulciano grape offering fabulous drinking at a great price with bright fruit notes and soft sweet tannins. The winery is biodynamic with Demeter certification.

Tornatore’s Etna Rosso is a medium-bodied Sicilian wine with beautiful personality, aromas of wild berries, black cherries and spices, and a full, savory and juicy mouthfeel. It matures for about 12 months in large barrels and is characterized by excellent value for money.

Vinification
Grapes harvested by hand in small crates are brought quickly to the winery and undergo manual selection on a belt. De-stemmed and not totally crushed, they are sent to concrete tanks, where they macerate for about 10/12 days at a temperature of 22/25°C. Once fermentation is finished, the grapes are left to macerate for a few more days after which they are racked and pressed using a traditional vertical press.

Organoleptic Characteristics
Light ruby red with faint purplish reflections they, typical of the variety that is not very rich in color. Hints of small red fruits, morello cherry, black cherry are evident on the nose. The palate is distinguished by its typical balanced tannicity and surprising fullness, savoriness and length.

Tornatore’s Etna Bianco is a white wine made from vines terraced on the north slope of the volcano. Mentholated hints of white fruit and citrus on the nose, from the background of herbs. The palate is pleasantly savoury, mineral, with juicy freshness and pleasant aromatic returns.

Organoleptic Characteristics
Pale straw yellow with intense greenish reflections on the eye; pleasant hints of green apple, grapefruit, white peach and aromatic herbs mark the nose of this wine, which shows its true identity on the palate with a very pleasant savoriness and freshness complemented by an extraordinary minerality; exclusive notes that invite the second glass.

Vinification
Grapes harvested by hand in small crates are brought quickly to the winery and undergo manual selection on a belt. De-stemmed and lightly crushed they arrive at the press where they are softly pressed. The resulting must is cold clarified and placed to ferment at a temperature of 15/16°C. Once fermentation is finished, the resulting wine rests on the fine lees for about three months.

A classically modern rendition of Barolo - arguably Italy's most famous wine. Orange hued cherry colour, complex wine with tar, cherry, earth, red currants and leather, bold ripe tannins, good structure.

Casa Vinicola Abbazia winery is located in Santo Stefano Belbo, a small town between Langhe Monferrato and Roero in Piedmont, North-western Italy. Pora is located in a warm and fertile site on a beautiful hillside with west and south exposures nearer to the valley floor. The resulting style is generous with ripe velvety tannins and a certain smoothness.

We have secured small volumes of this age worthy, complex Barbaresco, which comes from the Pora Vineyard, one of nine single vineyard cru Barbarescos made only the best vintages by Produttori del Barbaresco. This wine is full bodied, bone dry and super concentrated with earthy, mushroom aromas tempered by rose petals and delicate red floral aromas. It's produced by one of Italy's and the world's highest quality minded wine cooperatives, which has 51 members who collectively own approximately 100 of the nearly 700 hectares in this appellation in Piemonte, north west Italy.

The Ovello site has more clay, and the resulting wines are plump and fruit forward meaning they often drink earlier, as well as being super age worthy too. Classic ripe cherry notes that develop autumnal qualities and  more of the tar and spice that Barbaresco is famous for with age.
