Siege of Liège is a BA mixed fermentation saison, aged on Liège Sirop ( pear, apple, date) for 18 months, in an ex red wine puncheon. Conditioned in the bottle for 6 months. Rich and fruity, tart and tannic.
In Wallonia, southern Belgium, the famous beer style is a farmhouse Saison; often the most difficult style to describe, because the 'farmer brewers' use whatever grain may have been surplus at harvest time and a fermentation I that differs from the norm. This beer was inspired by our trip to Liège (a truly fascinating city) and the delicious fruit syrup used in their cooking. We brewed an ale using French Saison yeast, then put it into two large puncheons for a further fermentation, along with some souring microbes and wild yeasts, to which we added our homemade Liège Sirop. After a year in the oak, the initial sweetness from the stewed pear and apple, has been converted into a complex fruity tart sour ale, that we think the besieged folk of Liège may have imbibed centuries ago.

Exceptions during December:
In December, please allow 3 business days for delivery. The last day for Christmas orders is Monday, 15th December for all South Island and all rural deliveries, and Wednesday, 17th December for North Island non-rural deliveries. After these dates Regional Wines cannot guarantee delivery before 25th December. Bear in mind that business delivery addresses may be shut from Monday 23rd December as Xmas falls on a Thursday.
