The 2019 Zen is the best vintage yet produced of this outstanding full bodied, nutty, creamy, new world take on one of the great classic wines of the world. 

Tony Bish is Hawke's Bay best known, most dedicated Chardonnay specialist and Zen is his top wine. He has forged a name for himself as Hawke's Bay's king of Chardonnay and he named Zen after a challenging year because he felt zen when making it. The grapes all come from the highly rated Skeetfield Vineyard in the Bay and the wine was aged in a Taransaud oak ovum, a large egg shaped fermentation vessel, which was made specially for Tony, to create a full bodied, elegant, smooth Chardonnay in an environment that optimises lees contact during winemaking.

Gamay's smooth red fruited flavours and lifted red floral perfume are best known from France's Beaujolais region but here's an Italian take on the same theme from the dramatic beauty of the Valle d'Aoste in north east Italy. Grosjean is a small volume, high quality focussed producer, which makes this wine from grapes grown between 700 and 850 metres above sea level on steep sunny mountainous slopes.

The Grosjean family traces its roots back to the village of Fornet in the high mountain passes of the Valle d?Aosta known as Valgrisenche where they raised cattle. During the summer months, the family cultivated grapes and chestnuts on the slopes at a lower altitude, stocking up on wine to supply themselves over the long winters. In 1969, Dauphin Grosjean, the father of the five sons that now collaborate to produce the wines of this estate, was encouraged to present his wine at the local ?wine expo?. The exceptional quality of his work was recognized and the entire family became engaged in the expansion of the vineyards and in the production of wine.

The estate has now grown to encompass seven hectares of vineyards. The domaine is located in the hamlet of Ollignan on the border of the towns of Quart and Saint Christophe and includes ?cru? vineyard sites such as Tzeriat, Rovettaz, Creton, and Touren in Quart, plus Tzant? de Bagnere, Merletta and Castello di Pleod in Saint Christophe. After starting out with the traditional Petit Rouge along with some Gamay, Pinot Noir and Petite Arvine, the Grosjeans have planted other local varietals such as Fumin, Cornalin, Premetta and Vuillermin.

Sustainable farming techniques have been in place since 1975: only organic fertilizers are applied and no pesticides or herbicides are used. Natural yeasts are utilized for fermentation.

Powerful, full bodied, smooth and balanced by beautiful crisp citrus and white peach flavours. This is one of Hawke's Bay's great Chardonnays from Tony Bish, who has carved a niche for himself as king of Chardonnay in the Bay, where he devotes his winemaking talents entirely to Chardonnay. 

This wine is made from dry grown Mendoza Chardonnay grapes grown on Skeetfield Vineyard. All grapes in this wine were hand harvested and whole bunch pressed with minimal settling followed by 100% barrel, 100% indigenous yeast fermentation and matured for 12 months in Taransaud French oak. Lees stirring accentuates body, freshness and depth of flavour in this lovely wine.

Tornatore’s Etna Rosso is a medium-bodied Sicilian wine with beautiful personality, aromas of wild berries, black cherries and spices, and a full, savory and juicy mouthfeel. It matures for about 12 months in large barrels and is characterized by excellent value for money.

Vinification
Grapes harvested by hand in small crates are brought quickly to the winery and undergo manual selection on a belt. De-stemmed and not totally crushed, they are sent to concrete tanks, where they macerate for about 10/12 days at a temperature of 22/25°C. Once fermentation is finished, the grapes are left to macerate for a few more days after which they are racked and pressed using a traditional vertical press.

Organoleptic Characteristics
Light ruby red with faint purplish reflections they, typical of the variety that is not very rich in color. Hints of small red fruits, morello cherry, black cherry are evident on the nose. The palate is distinguished by its typical balanced tannicity and surprising fullness, savoriness and length.

Subtle spice notes from rye malt & the yeast add nuance and warmth, making this a perfect wintertime sour.

Follow The Sun is a brand new Cali IPA inspired by the easy-drinking, hop-forward beers we enjoyed on the
West Coast of the US.
