Calatayud, a small appellation in the heart of Arag6n, Spain. A hidden valley and home to the red garnacha grape. A valley where the working conditions are difficult for the farmers. Rough slate soils, old bush vines planted on steep slopes up to 1,100m, hot summers and cold winters where rainfall is scarce and the wind is
always blowing. Furthermore, they have to deal with a fragmented landscape of small parcels and rarely have a successor for their years of hard labour. It's tough and challenging, and yet, they understand the value of their soil and grapes, each plot providing a distinct character to the grape compared to its neighbour. Las Pizarras (the slate soils) is our range showcasing the diversity of the region. Named after the town or plot the grapes originate from, each wine in the collection expresses its unique character, but all are born out of soil, nature and the right human touch.
FABLA is a language used in several places in the north of the autonomic
community of Aragén for over 1.000 years. Today is used by just 12.000 people.

The stunning winery was constructed in 1868 and sports five naves separated by arches 30m high, made from forged iron, typical of the south of Spain and boasts state of the art wine tech within.
Vallehondo is a 100% Syrah that expresses the extremes of the D.O. Condado de Huelva terroir, famous for its warmth, saline notes from the Atlantic and soils predominated by sand and limestone.

Vinification
Grapes harvested by hand in small crates are brought quickly to the winery and undergo manual selection on a belt. De-stemmed and not totally crushed, they are sent to concrete tanks, where they macerate for about 10/12 days at a temperature of 22/25°C. Once fermentation is finished, the grapes are left to macerate for a few more days after which they are racked and pressed using a traditional vertical press.
Organoleptic Characteristics
Light ruby red with faint purplish reflections they, typical of the variety that is not very rich in color. Hints of small red fruits, morello cherry, black cherry are evident on the nose. The palate is distinguished by its typical balanced tannicity and surprising fullness, savoriness and length.

Unit price perThis is a lot of fun; a sparkling, savoury Italian wine has a pale pink colour savoury and was made using the method? ancestral winemaking technique. This means it was fermented in the bottle where the CO2 dissolved into the wine to make it sparkling. It was not disgorged after fermentation so it retains lees (yeast cells) and therefore a light hazyness.
