The Sauvignon Blanc Cask Edition Whiskey is a work by the Speyside distillery Tamnavulin. Speyside is the perfect location for whiskey production: there is a unique microclimate and the fertile farmland is ideal for growing grain. The Scottish distillery's delicate whiskey first rested in former bourbon barrels and was then refined in wine barrels that were previously filled with the finest Sauvignon Blanc.

TASTING NOTE
This is a highly concentrated Pinot Noir from low yielding vines. This single vineyard wine displays rich dark fruit aromas of cherries and plums together with smoky and earthy undertones. Full bodied with immense depth of fruit flavours layered with forest floor complexity and great tannin structure. The densely layered palate of this wine shows all the complexity and richness of flavours making it ripe yet elegant wine with great structure and a juicy finish.

WINEMAKING
Ripe fruit was hand harvested and completely destemmed, but not crushed, with the aim of achieving a significant percentage of intact berries in the ferment. Grapes were put on cold soak for 4-5 days prior to undergoing wild fermentation. The wine remained on skins post fermentation to optimise tannin extraction whilst locking in the deep, ruby colour. This wine was drained and pressed and then aged in old French barriques for nine months during which time it underwent a complete malolactic fermentation. In pursuit of the highest quality this wine has not been fined.

Serve alongside a roasted beef or lamb and dark rich gravy and mushrooms. These dishes will complement the rich flavours and complexity of this wine.

Domaine Charles Audoin, based in Marsannay-la-Cote in Burgundy, has been a family-run estate since its establishment in the early 20th century. Under the leadership of Charles Audoin and later his son Cyril, the domaine has expanded to approximately 14 hectares across the Marsannay appellation. They are pioneers in promoting the quality of Marsannay, which is known for producing excellent red, white, and rosé wines.

The terroir of Marsannay, located at the northern end of the Côte de Nuits, is diverse, comprising predominantly limestone and clay soils. The vineyards used for ‘Cuvée Charlie’ are from some of the domaine's prime sites, with vines aged around 40 to 60 years. This maturity of the vines brings depth and concentration to the wine. The soils, rich in limestone, contribute to the wine’s minerality and elegance, while the clay content enhances its body and structure.

An audacious combination. Martell Blue Swift is a spirit drink made of cognac VSOP then finished in Bourbon casks. Through Martell's signature distillation process, the eaux-de-vie absorbs the rich aromatic tones of the bourbon cask. The result is Martell's hallmark style - delicate notes of candied fruit and plum - complemented by the subtle sweetness of vanilla and toasted oak from the casks. Exceptionally smooth, with a rounded taste and unique character.

Aroma: Gourmet notes of banana and caramelised pear introduce the subtle sweetness of vanilla, coconut and spices.
Palate: A sensation of fullness and generosity with notes of ginger and candied fruit, followed by distinctive hints of toasted oak from the bourbon casks.

Fair Light is a first-ever blend of premium unpeated single malt, with the distiller's selection of Waiheke's peated back catalogue. Fair Light is named for the first ever synthesizer. This speaks to the synthesis of the two hemispheres that went into this bottling.

Palate There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg. Gentle NZ peat smoke and chocolate.

This new addition to the Esk Valley stable of wines is a lighter, more fragrant expression of Syrah, which represents a bit of a style departure from its siblings made from grapes grown on the Gimblett Gravels.
In this case, the wine is made from grapes grown on a 1.1 hectare vineyard at the top of The Terraces Vineyard at Bay View, just north of Napier city. The warmth of the limestone soils and the cooling sea breezes combine to ripen Syrah grapes slowly with hot days and cool nights, providing floral aromas supported by depth of dark fruit, black olive and fleshy red fruit notes. All grapes were hand picked and fermented as a mix of whole cluster bunches and destemmed fruit in a single concrete fermenter with wild yeasts. 

It’s made in small volumes and will age for up to and beyond 10 years.

Whitehaven Wines began life in 1994 as a romantic business for a couple of corporate escapees, Sue and Greg White, who had given up life in the rat race of Auckland for another kind of life aboard their yacht. When sailing around the country, they took shelter in the Marlborough Sounds from Pacific storms and fell in love with the region. An easy thing to do when harbouring in the spectacularly pristine waters of the Sounds. They decided to settle there on terra firma once more and try their hands at wine production, hiring a winemaker and beginning a business which has now been around for 26 years. Greg has sadly passed away now, leaving a legacy as well as his wife and daughter, Sam, to run the winery. Their winemaker is Peter Jackson.

Hundreds of recipes involving Galliano are used worldwide. Galliano is an ideal "marrying" ingredient. It adds no intrusive flavour, but serves to deepen and give character to other ingredients, both ordinary and exotic. It is used both as a digestif and as an ingredient for cocktails, most notably the Harvey Wallbanger. Site : On the Mont Battois hillside, facing Beaune, the name "Grèves" derives from the sandy and gravely soil. Separated from the Clos des Fèves by a narrow path this Chanson vineyard covers 2 hectares

The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on September 13. 2022 vintage was quite generous both in volume and quality and the red wines are generous and well-balanced with an outstanding crunchy fruit.

Tasting : Bright ruby colour. Fragrances of peony mixed with intense aromas of ripe red berries (strawberry, cherry) mixed with coffee and spicy notes. Delicate vanilla. Well-balanced and complex. Food pairing : It is perfectly matched with red meat grilled or en sauce, and all cheeses, especially the local cheeses like Epoisses or Citeaux.
