Lambics of several vintages are blended, then receive a secondary fermentation in the bottle, which is cellared for a minimum of six months.
The strong, tart, funky aroma contains notes of earthy wood, cut hay, lemon, sour apple and vanilla. The taste is assertively, intensely tart, with flavors of rhubarb and citrus augmented by earthy, nutty notes.
