Harvested on the 10th of April and destemmed to 500 L Amphora. Light punch downs using hands and once fermented sealed up on skins for 150 days / 5 months and then pressed to a single seasoned French oak barrel. 5 months in barrel before being bottled under cork in the driveway.
The result is a wine that has very well integrated soft tannin, cherry & raspberry fruit up front into dark chocolate nutmeg & capsicum like herbaceous notes on the finish.
Cabernet Sauvignon has great cellaring potential & this wine while drinking well now, has all the components to develop in bottle between 3-15 years.

Unit price perWhite Stones Chardonnay comes from a select 27 rows within Block 1 of the Adrianna Vineyard. The name refers to the ground beneath the vines which is covered with gravelly oval white stones.
The Adrianna vineyard is located at an elevation of almost 5,000 feet in the Gualtallary sub-district of the Tupungato region. The rocky soil prevents deep root growth and allows for ideal drainage conditions. These are very poor soils where the vines are constantly in conditions of stress. The cool nights allow for very slow ripening, optimal acid retention and low yields.

Unit price perFruit for this wine was sourced from mature vines in the Isolation Ridge vineyard at Frankland Estate. The vineyard sits on an undulating northern and eastern facing slope on ancient duplex soils of gravel and loam over a clay sub-soil. It is farmed using organic viticultural practices and this is reflected in the depth and concentration of fruit flavours. The vines are trained on a Scott Henry trellis system to enhance sunlight penetration of the canopy and optimize ripening conditions.
This wine was fermented as long and slowly as possible, at temperatures not exceeding 26°C in open pot fermentation tanks that allowed the cap to be worked by plunging and an extended maceration period allowed optimal colour, flavour and tannin extraction. It was aged in 500 litre French oak puncheons, this contributing textural complexity without compromising the opulent natural fruit flavours of the wine
