Our first white wine started out as an orange wine, fermented with the skins for an extended period. I liked the tactile feeling and density, but missed the finesse and precision of the classic French white wines from for example the Loire. With the vintage 2015 I changed our technique to search for the purity and flavors of Etna which evolved in maintaining a short period of skin contact and aging our white wines for an extended period in the coldest part of our cellar before bottling. The obtained elegance, purity and density makes this wine very suited to accompany a wide variety of dishes and cuisine, from fish to white meat.
This new Signatory Vintage release is a second-fill ex-Oloroso Sherry matured Mortlach, its soft amber hue shows the subdued influence of the refill casks, allowing the meaty and savoury notes characteristic of the distillery to shine through. Reminiscent of old fashioned fruit pastilles, dried pineapple and that distinctive umami note to finish.

This time they came to us for a brew day and we have created another classic for those demanding dry mouths. Hang time is a punchy full bodied hazy using the goodnes of 2 hops we have never used before in NZ 101 and Alora. This NZ/US combo delivers passion and stonefruit to the moon that is backed up with tingly yuzu and lime zest and some sweet melon smooches.

Unit price perThis beer is a love letter to Blackball, a firebrand of a town with fiercely convivial charm. We first visited out of curiosity & left utterly smitten. By the time we landed, miner Patrick “Wild Bill” Hickey had already refused to leave his pork pie after a measly 15-minute break on a 10-hour work stretch. It was 1908, & his act triggered an 11-week miner’s strike eventually sparking NZ’S Labour movement & solidifying Blackball as a magnet for broadminded folk who eat politicos for breakfast, & mine their own good luck. On our second visit, we stayed at Formerly the Blackball Hilton, drank dark lager, laughed with locals & watched a reveller get ferried home in a wheelbarrow. Pure gold. We’ve been back since & will go again because Coasters in Blackball have wit & more true grit than any lump from a mine.

Unit price perHi, my name is Al, I am the very special progeny of a collaboration between breweries Altitude and Aliment. I would like to tell you a bit about myself. I am beautiful dark bronze, fresh espresso colour with a soft tan foam on top. First impressions aside you should smell my delicious top notes of baked rye sourdough, toasted caramel nuts, sticky toffee pudding and hints of dried fruits. If this doesn't make you love me then I taste just as good. An Initial rich totasted fruit bread flavour is superceded by a little chocolate note a with full yet very clean mouthfeel from my lager fermentation.

Direct and impressive acid-cherry nose. Nice in the mouth, a little structural too – the flavour a bit disassociated after filtering. The finish is excellent though – wide, long and persistent. This will be super – probably excellent!
