Sercial is one of the traditional Madeira grape offering the driest style from the island. The base wine is fortified to 17-20% and stored in “estufas” which are heated to 45 degrees celsius for no less than 3 months.

This wine is then aged oxidatively in casks called Canteiro, usually on the top floor of the wine cellar, where the temperature is higher. Serical is the lightest, most acidic and delicate expression of Madeira that takes the longest to mature.

Biscuity pilsner malt and distinctive Motueka and Riwaka hops bringing aromas of lemon and lime. Nelson Sauvin for a tart gooseberry hit. Straw coloured appearance, brilliantly clear, with a long lasting white head. Crisp and bitter. Medium dry finish.

Viña Casa Viva was founded in 1993 in Chile’s Casablanca Valley where a strong maritime influence, and a significant difference between daytime and night time temperatures (diurnal variation) allow for a longer ripening process that results in tremendous balance between acidity and sugar levels.

This Carmenere, the grape that put Chile on the map, is beautifully fragrant with dark fruits complexed by savoury herbal, almost minty elements. The palate is lush and opulent with the silken texture we have come to expect from ripe yet balanced fruit that is grown in this region.

Elegant and refined with a backbone of pristine fruit and balanced acidity, this finely concentrated Chardonnay has a lovely freshness and finesse and will become more complex as it evolves over time. It is drinking well now, and will develop beautifully over 5-7 years.

VINEYARDS
Old vine Mendoza Chardonnay was sourced from two sites in Hawke’s Bay.
The Mangatahi site is inland and elevated and later ripening, while Bridge Pa
ripens Chardonnay beautifully with their red metal soils.
Low yielding vines, open canopy management, managed irrigation and Sustainable
Winegrowing NZ farmed were common to both sites. The Mendoza clone with their
typical hen and chicken bunches produced fruit of great intensity and balance,
and structured acidity. This Chardonnay was hand harvested and cooled overnight.

WINEMAKING
The cooled bunches were hand sorted then whole bunched pressed. The majority of
juice was cold settled then racked to barrel. Fermentation was in new and seasoned
French oak, with selected cultured yeast and indigenous yeast, for added complexity.
A combination of 500L puncheons and 225L barriques were employed. Lees stirring
post fermentation was regular and malolactic fermentation was completed in barrel.
The Chardonnay matured in barrel for 9 months before blending and bottling.

TASTING NOTE
An elegant Chardonnay which focuses on the beautiful structure so evident in this
grape variety. Pristine fruit and balanced acidity are the backbone, enhanced with
seamless texture and mouthfeel. Citrus notes, particularly grapefruit pith abound, gracefully supported by sweet French oak.

The Hennessy XO is a blend of more than a hundred different eaux-de-vie. Those eaux-de-vie are between 10 to 70 years old. This XO used to be a Reserve de Famille, exclusively available to the Hennessy family, later on it found its way onto international markets.

Syrah is one of the great reds of Hawke's Bay and this wine gains its full body, impressive structure and dry spicy flavours from the addition of whole clusters of grapes to the fermentation. 

It's a powerful big red with flavours of dark plum and spiced fruit.

The 2020 vintage was warm and dry, ideal for making wines to cellar. This wine can age for 10 years+. 

Château Maucoil’s vineyards are located in the northwest of the Châteauneuf du Pape area, on the left bank of the River Rhône. This wine consists of Grenache blanc (90%) Bourboulenc (8%) Clairette (2%). This wine is clean and bright. Rich and fine on the nose with pear and citrus aromas. The palate is mineral with notes of green apple and lemon.

The Bilancia Syrah is sourced from a single vineyard on Roy's Hill, Hawke's Bay. This is a very fruit forward, bright wine with floral complexity on the nose and a spicy, youthful palate.

Fresh and sprightly like the piwakawaka that adorns the label and designed to be enjoyed on any occasion. 

This is a juniper forward gin based around Dr Beak's core botanicals. A savoury expression with notes of fresh rosemary and mint, finishing with a kick of horopito. 

While Dr Beak's Gin is layered and complex making it ideal for cocktails, their New Zealand Garden Gin is pared back - though still bold in flavour and bottled at 45.5%. Perfect for a G'n'T at home in the garden. 

Leonor by Antonio Flores is described as the wild child of Jerez. Due to its mysterious ageing process it could be described as similar to an Amontillado on the nose and similar to an Oloroso on the palate. Leonor shows a light mahogany colour with golden tones and slightly orange rim. On the nose intense and complex with typical Amontillado notes such as hazelnuts perfectly balanced with other aromas such as bitter orange and mature oak. On the palate powerful and intense with toasted notes yet smooth and silky.
