Wander into the woods. In the Pines - Pacific Northwest style IPA, dripping with Oregon grown Chinook, Cascade, Strata and a touch of Simcoe and finished with a shot of distilled Douglas Fir extract. The result is a bright golden IPA, with clean juicy grapefruit bitterness, drenched in spicy citrus, sticky sativa and misty Oregon old growth aromatics. Lose yourself in a forest of flavour.

Aotearoa #57 | Victory Knives Hazy IPA

The Sawmill Aotearoa series is about celebrating the best of New Zealand! This month we have worked with Victory Knives, a market leading locally owned business who have been producing the highest quality knives in New Zealand for 97 years. 

Using the best Moutere, Nelson Sauvin, Riwaka and Motueka hops from NZ Hops in Nelson, we have brewed a juicy and hazy IPA with lemon/lime, tropical and wine-like aroma.

Left-eye Lucy is a crisp, clean lager with a light, balanced bitterness and full, fruit forward flavour. Try and say that 10 times quickly.

She’s late hopped with Tettnang and Lemondrop giving some light floral and citrus notes.

Antsy Adam is a hop-forward APA, with layers of citrus over a light ale malt base. Orange, grapefruit and tangelo notes will give your buds a high five on the way down.
He’s late and dry hopped with Chinook, Bravo and Lotus hop varieties.

40 IBU’s | 5.3%

Humble Harry is your easy going, tropical hazy. Not too full of himself, he’s forever approachable. A mix of stonefruits and melons with a goodbye kiss of citrus to finish things off.

Precious Pete is the gap year you always wanted - a Euro style pils ready to pop. He goes down like a sweet biscuit with malt characters, balanced by a clean dry bitterness.

Think hop flavour and aromas of citrus, sandalwood spice and florals.

Our latest addition is a golden lager. It’s been on our radar for a while, and up till now, it’s impossible to brew. We have found a new yeast specific for zeros that can work well with wheat and barley to brew an all-malt lager. A quality Golden lager needs quality ingredients and this all NZ beer delivers! The grains of Canterbury give the body of Riwaka hops the finish. Enjoy
