Don Papa Baroko is made on the island of Negros in the Philippines. It is the result of a blend with old rum distilled from molasses, known locally as "black gold" black gold, which comes from one of the many local mills on the island.

Don Papa Baroko has aged for several years in American oak barrels. The Master Blender then selects the most expressive casks, those which best reveal the fruity and vanilla notes.

A richly flavoursome rum from the Philippines, inspired by the story of Papa Isio, who played a big part in the late-19th century Philippine revolution. The rum itself is made using sugar cane grown on the island of Negros in the Philippines and matured in oak barrels for 7 years, after which it is blended and bottled.

Nose: Fruity notes up front, with sweet tangerines and apricots. This is followed by vanilla ice-cream, drizzled with runny toffee sauce.

Palate: Bags-full of vanilla and cinnamon. Hints of raisin, sultana and marmalade.

Finish: Medium length with punchy cinnamon.

Chris and Elliot spent the good part of 18 months searching for the perfect oak aged Caribbean rum. Many taste tests were conducted with friends and family before finally settling on their first cask.

They then started tinkering with spicing the rum right here in New Zealand, blending the rich history of the Caribbean with the adventurous spirit of New Zealand. 

The subtle caramel sweetness of the rum with a vanilla back bone allowed the beautiful spices to come through, highlighting local citrus, nutmeg and clove.

The infusion became more refined and complex, through out lock down. And by the end they were happy with the result. Let the bottling begin!

Originated in 1862, Bacardi superior rum is the original, mixable light-bodied rum aged between one to two years in carefully selected oak barrels. After ageing, the rums are blended and passed through a second charcoal filtration to achieve maximum clarity and characteristic Barcardi smoothness. Palate:  A wonderfully complex and satisfying balance of sweetness, fruit, spice and spirit, all tempered by the extra ageing stage in ex-cognac French oak barrels; long, smooth and sweet with a weight of dark cherry chocolate and flavours of intense dried fruits like sultana, date and prune; sweet oak spices of clove, vanilla and cinnamon, and lighter notes of dried mango and raspberry, with a subtle hint of ginger to finish.
