This single vintage expression from Foursquare was distilled in 2011 and matured for twelve years in a parcel of ex Bourbon casks. There are notes of fragrant citrus oil, molasses treacle, freshly grated ginger and cracked pepper. The white oak shows its influence with notes of creamy vanilla  and coconut.

Plantation 3 Stars is a crisp, tasty white rum made by blending spirit produced in Jamaica, Trinidad and Barbados. Some of the rums in the blend are aged, though their colour is removed via a process of carbon filtration.

Nose: Hints of dried coconut and guava. A little honey too, and soft spice.

Palate: Spiced palate entry. Creamy vanilla custard, fresh sugar cane honey and even a hint of agave.

Finish: Floral finish. Zinging spices.

A reassuringly rich Demerara blend from the 1930's containing 7 dark rums, each patiently aged in Guyana for at least 3 years. Skipper Rum is distilled from sugar cane and molasses and patiently oak-aged in warehouses on the banks of the Demerara in Guyana before being exported. The continuous distillation and maturation process takes place in Trinidad, the southernmost island of the Caribbean. STOLEN Gold Rum matures for a minimum of four years in individually chosen charred American oak bourbon barrels.

 A selection of light and heavy molasses-based rums are then carefully blended by hand. The result is a golden amber hue with butterscotch and cinnamon spice aromas on the nose with a smooth and buttery finish in the mouth.

Chris and Elliot spent the good part of 18 months searching for the perfect oak aged Caribbean rum. Many taste tests were conducted with friends and family before finally settling on their first cask.

They then started tinkering with spicing the rum right here in New Zealand, blending the rich history of the Caribbean with the adventurous spirit of New Zealand. 

The subtle caramel sweetness of the rum with a vanilla back bone allowed the beautiful spices to come through, highlighting local citrus, nutmeg and clove.

The infusion became more refined and complex, through out lock down. And by the end they were happy with the result. Let the bottling begin!

An excellent blend of rums aged for up to 8 years in white oak casks that previously held scotch whisky and bourbon. Dried fruit and spice on the nose leads to a plate of further dried fruits and vanilla.

Small batch natural Rum.  Made in a traditional 100% copper pot still.  Tasting notes of Vanilla, Caramel, Butterscotch, and charred oak.  Best served with ginger ale, ice, and fresh lime.

Tasting notes:  This is a clear, dark, coppery amber colour with burnished copper highlights, on the nose there is sweet molasses, banana, chocolate, vanilla, cinnamon and mild ginger.  On the palate it is extremely smooth finish despite its high alcohol content with a long, lingering finish.

For many rum aficionados Eclipse is also the reference by which all rum should be measured. Eclipse has a brilliant golden amber colour and a luxuriously complex aroma.
