Unit price perFour Pillars - Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as "Australian Sherry" and now known as Apera.
They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.
Slightly deeper in colour, this is a rich, intense and layered barrel aged gin. A pine needle quality underpins some amazing complexity. The residual Sherry and Apera characters have integrated beautifully with the deeper cassia and star anise flavours - think dried fruits and nuts.
The addition of some Spanish Amontillado Sherry has added some length and sweetness to the final gin.
Windspiel - Theheart of this creation is the spirit of discovery. It drove Fridericus Rex to bring the potato to Germany and inspired us to produce a gin from it. Classic juniper berries, lemons and coriander combined with our potatoes cultivated in rich volcanic soil results in a traditional gin aroma with a mild, delicate flavor. To give it a special character, cinnamon bark and lavender as well as other botanicals have been added - according to a secret recipe of the master distiller. Unit price perThis product starts life as classic Mr. Black coffee & spirit infusion, before being placed in some very unique and special barrels. The folks over at Illegal Mezcal in Oaxaca, Mexico had been experimenting with aging mezcal in oak, which of course piqued the interest of Mr. Black. After resting the coffee liqueur in ex-mezcal casks they added in a touch of Ilegal Joven Mezcal.
The final blend brings notes of nutmeg, spice and roasted agave, alongside Mr Black’s signature Arabica coffee flavour. The mezcal adds deep complexity to the liqueur, making this one a winner for contemplative sipping.
The first Rum from LWF Distillery. This clean white rum is created by fermenting Molasses from Bundaberg, Queensland Australia with a specialty yeast, in beautiful clean New Zealand rainwater. The completed ferment is then transferred to the pot still for its first distillation.
This 'wash run' is then combined with one other wash run to go through the rectifying column – the spirit run. The spirit run is where all the purification happens - the spirit comes off at between 94-98 abv. Its clean and ready to settle for a couple of weeks before being reduced to 40%, with 5 times filtered New Zealand rainwater for bottling.
This is a fresh rum, with clean flavour and just enough distinct back flavour to be enjoyed in any of your classic cocktails.
