Long Pond rums give Canerock Jamaican Spiced Rum its signature high-intensity character and structure. Clarendon Distillery are the ?Guardians of Tradition? and is surrounded by Sugarcane fields, from which they make their own Molasses. Limited to just 24 casks, the exclusive Trinidad 2009 expression was chosen from the cellars of Trinidad Distillers Limited by Alexandre Gabriel, Plantation Rum?s Master Blender, and Andrew Hassell, General Manager and rum historian at West Indies Rum Distillery. The next destination is already very eagerly awaited.

Continuously distilled in multi-column stills, Plantation Trinidad 2009 also stands out for its maturation process. This new limited edition benefited from a signature double ageing process inspired by a 300-year-old technique updated by Alexandre Gabriel, an authority in the art of ageing. This ancestral method is inseparable from the identity of Plantation Rums.

This superb rum was first matured for 11 years in 200-litre ex-bourbon casks in the Trinidadian distillery?s cellars, built entirely of red bricks and particularly admired by Alexandre Gabriel and Andrew Hassell. In addition to their aesthetic appeal, the bricks make it possible to maintain a cool temperature and, as a result, to exert greater control over the ageing of the cane Eaux-de-vie. Plantation Trinidad 2009 was then treated to an additional one-year ageing period in Javrezac, in France?s Charente region, in 400-litre French oak barrels from Maison Ferrand.

Traditionally made using the dried peel of the small Curacao orange, named after the island of Curacao in the Caribbean, Curacao liqueurs can be clear, blue or orange. The colours are purely decorative, but the bitter orange flavours are very similar. The cura?ao fruits are sliced and macerated in fine neutral spirit to extract the flavours. Situated on the remote Hebridean Island of the same name, Raasay Distillery was founded in 2014. While the island is no stranger to distilling, Raasay is the first legal distillery to be built there. With fewer than 200 inhabitants, Raasay is a tight knit community, the distillers aim to be at one with the island, bottling on site and employing many locals.

The Raasay Hebridean Gin is distilled in the old way, using malted barley spirit three times distilled in a pot still. Unusually the juniper is harvested on the island itself, complimented by botanicals such as rhubarb root, cubeb, angelica root, and sweet orange peel.

Ocho is the first tequila to designate both the year it was produced and the precise field from which the family grown agaves were sourced. Each batch comes from a differentfield or rancho contributing distinctive characteristics of that place. The blue agave takes about 10 years to grow, so there can be no more tequila from that field for another decade, making each vintage rare and collectible. The Blanco is unaged.
