The Vintage 2022 : After a winter characterized by marked variations in temperature between January and February, spring started with mild temperatures. A sequence of cold weather in April was followed by warm temperatures in May but the lack of water was very noticeable and could not be compensated by the rainy storms of June. Summer was marked by several and long heat waves and the storms of the end of August were most welcome. The harvest at Chanson started on August 30 with a team of 100 persons and ended on September 13. 2022 vintage was quite generous both in volume and quality and the red wines are generous and well-balanced with an outstanding crunchy fruit.
Tasting : Bright ruby colour. Fragrances of peony mixed with intense aromas of ripe red berries (strawberry, cherry) mixed with coffee and spicy notes. Delicate vanilla. Well-balanced and complex. Deep and refined texture. Elegant and well-integrated oak note, well-shaped tannins. Long and spicy finish. Scores : 93/100 Jasper Morris/Inside Burgundy - 16,5+/100 Jancis Robinson
Food pairing : It is perfectly matched with red meat grilled or en sauce, and all cheeses, especially the local cheeses like Epoisses or Citeaux.

Unit price perFor this Pruim, we used the old plum variety Belle De Louvain, hand-picked in Limburg, Belgium.
Maceration took almost four months and the lambics for both maceration and blending originate from six different barrels and thirteen different brews, of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is almost 22 months.
The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland. 100% 3 Fonteinen brewed lambic.

Brut Nature is a beer that evolves in the bottle and can be kept for up to 5 years . The use of dry hopping with Belgian hops emphasizes the fruity and spicy character of the 5 hop varieties . The result is a dry, mildly bitter beer with a pleasant aftertaste.
The different fermentation stages, top fermentation and refermentation in the bottle with wild yeast require a brewing process of at least 3 months.

It is then bottled in a beautiful champagne bottle, where another form of fermentation takes place. After 6 months, gueuze takes on a golden color and becomes a slightly carbonated and acidic beer. But because it is then stored in a cellar for a few years, it becomes really unusual. Gueuze Cuvée René is one of the jewels of Lindema's brewery. With its golden color and its beautiful sherry aromas, this is the queen of gueuzes.
