100% Cabernet Sauvignon from the Cornerstone Vineyard

It’s all in the Cabernet Sauvignon grape. Aromas of wild dark berry fruits, crushed autumn leaves dark and integrated oak. This characterful wine has intense blackcurrant with power and long graphie tannins. The quintessential ‘iron fist in a silk glove’.

Hugo, my brother, is a talented artist and is always ready to lend a hand with Chateau Garage. His silhouette appeared in the driveway at 10 o’clock at night to help press the last of this Cabernet to barrel. I was exhausted from pressing all day and he got me through. Here’s to Hugo!

Coupling Old World inspiration with New World innovation, Jansz Tasmania crafts this wine from vineyards throughout Tasmania, all of which produce high-quality Chardonnay and Pinot Noir.

Tasting Note
Aromas of honeysuckle, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit. Extended time on lees during secondary fermentation contributes to more complex aromas of nougat and roasted nuts. The palate is balanced with delicate fruit flavour, fine creamy texture and refreshing natural acidity.

Winemaking
Handpicking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine.

Best Enjoyed With
A perfect match with natural oysters drizzled with any of our cuvées (instead of lemon) or fritto misto with lemon aioli.

This wine offers a complex aroma of citrus, stonefruit, and spice characteristics. The palate has depth and intensity with mineral notes and a powerful finish with flavours of apricot and vanilla, balanced by a juicy acidity. A Chardonnay that shows richness alongside a tightly structured palate with layers of texture and pairs well with snapper, saffron, shellfish and other delicate flavours.

Gisborne Black

The black sheep of the Sunshine family, this luscious milk stout is a smooth, velvety blend of chocolate, coffee and vanilla with roasted malt. Rich but balanced, this is a brew that demands to be savoured.

As we head into winter we’ve got the perfect fireside drop – Russian Imperial Stout.  Don’t panic! Like a black hole, this opaque beer absorbs all light.  Sit down and allow time to bend and stretch whilst thinking of the complexities of beer and the universe.  Sit back and imagine how many versions of you and this beer are being enjoyed.  Enjoy now, or cryogenically freeze and save for some years down the line.

ABV: 10%

Bright, shimmering pink. On the nose fresh forest berries, a light citrus scent with spicy undertones. On the palate juicy, crispy with a perceivable saltiness. Clear and fresh on the finish.

Edgar, oak barrel aged farmhouse ale, laced with Sauvignon Blanc-derived Phantasm thiol-enrichment powder, and fermented with a unique blend of Wild Workshop and Sapwood Cellars’ own house cultures.

This batch is a re-brew(second time only) of ZombieR because people are always asking when we are going to brew it again. Out of the can there is that familiar aroma of the guava and passionfruit. On tasting though you will find there is a noticeable difference compared to Hop Zombie. It seems that the balance of the beer is noticeably greater.

Tito's Hand Made Vodka is made in old-fashioned pot stills and using corn as the base, Tito?s is a naturally gluten free vodka. Their process, similar to that used to make fine single malt scotches and high-end French cognacs, requires more skill and effort, but we think it?s well worth it. The final product is a vodka so smooth, you can drink it straight.

The friendly and round flavor Minerva Imperial Stout marries perfectly with sweet flavors like chocolate truffles or the duck confit with light garlic mayonnaise, so it is excellent for red meats in general.
