No more than 60 casks will make up each batch. Each cask is selected for the notes it will bring to the whisky. Each batch will have a unique code and shows the cask breakdown which enables the recipient, each year, to contrast, compare and explore the different notes that the wood and blending brings to this Islay Scotch Whisky. #01-2023 uses the cask selection to create layers of sweetness, zest intertwined with the classic smoke of Islay.

TASTING NOTES

Bursts of zesty citrus and black pepper, evolving to toasted bread, marmalade, and smoke. On the palate, it’s fresh with salt, lime, and spices, while the finish lingers with spice, smoke, and toffee-like richness.

Fair Light is a first-ever blend of premium unpeated single malt, with the distiller's selection of Waiheke's peated back catalogue. Fair Light is named for the first ever synthesizer. This speaks to the synthesis of the two hemispheres that went into this bottling. 

Colour Amber Light 

Nose Heather, honey, vanilla spices, gentle peat 

Palate There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg. Gentle NZ peat smoke and chocolate. 

Finish Medium-long, dried fruit, chocolate.

For this Oude Geuze Golden Blend we blended lambikken that originate from three different barrels and four different brews, with three different brewers. This Golden Blend is particular in that sense that we used two- and five-year old lambikken only, and finished it with some freshly brewed lambik wort for the push in the bottle. Since a good 60% is two-year old lambik and almost 40% is five years old, the weighted average age of this bottle, upon bottling, is more than 31 months. Add to that at least a year of bottle conditioning, and it will have reached a weighted age of more than 43 months. Compared to blend 54, this blend roughly has an inverted proportion of two- and five-year-old lambik.
