Named after our Founder’s recently born daughter, Penelope Bourbon is our signature four grain straight bourbon whiskey uniquely blended from three bourbon mash bills.  Each barrel is hand-selected and blended into a single batch for your enjoyment.   Remarkably smooth and flavorful, Penelope Four Grain is perfect whether sipping neat or using in your favorite cocktail.

The 2018 Senejac is deep garnet-purple coloured with a nose of warm berries, earth, herbs and tobacco plus floral notions. The palate is full-bodied and rich with fine-grained tannins, nice freshness and good length. 90-92 Lisa Perrotti-Brown, Wine Advocate (2019).

Troy has not brewed in a long time, and I was giving him a hard time about coming up with something unique. Maybe, just maybe, he lost his talent. To prove me wrong he jumped on his little 3 BBL system and came up with Terps. What the heck are terps, you ask? Terps are aromatic molecules that enhance and complement the hop flavor and aromas used in this beer. This new style IPA has a unique, fruity, and tropical flavor profile.

Replacing Brut Premier in 2021, the latest release from the family-owned Champagne House takes the multi-vintage cuvée to higher grounds.

The innovative creation of the Perpetual Reserve (a blend of non-malolactic 50% chardonnay and 50% pinot noir set aside and blended in closed stainless-steel vats every year since 2012); coupled with the influence of Roederer's sustainable organic and biodynamic farming; and the use of an extensive palette of oak-aged Reserve wines in the cuvee; all combine to bring a never-seen before dimension in the multi-vintage champagne world.

Each Collection is numbered and represents the number of blends created by the House since its foundation in 1776.
