Sprung from the harmonious marriage of apple juice and Calvados, the Pommeau de Normandie is flaming like autumn in the Pays d'Auge. It is a soft with character. The sweetness of the apple and the calvados aged in oak casks makes it an original aperitif and dessert wine.

Named for the iconic protective wall that stretches behind their Butchertown distillery, Floodwall is a superb blend of superior, copper pot-distilled apple brandy aged in Kentucky bourbon barrels and 250-liter Oloroso sherry casks from Spain. Made from American apple brandy with a minimum age of four years, a full-bodied spirit at 100 proof alcohol strength. Floodwall is non-chill filtered with no post-distillation addition of apple flavor or essences, no Bois? (oak flavor or infusion), sugar or caramel color for an authentic, uncorrupted natural flavor and natural color.

Aromas of honeyed apple bouquet (unusually fresh) with lovely complexity. Quite floral, honeysuckle and butterscotch mingling with hints of whiskey, oak, and vanilla. Flavors are quite crisp, frisky and slightly mid-palate. ?Scotchy? and a little nutty rancio with sherry butterscotch and red-apple skin. Finish is oily with lots of legs. Hangs in on the tongue for ages with a racy back end finish.

The essence of Plantation Rum Original Dark is the wealth of its palate and its technique of double aging. Plantation Original Dark comprises the elegant rums of Trinidad which are distilled then aged in their tropical climate in the Caribbean in American oak barrels under high heat before traveling to France. Once in Europe, the House cellar master decides on less ?high esters? for the Trinidadian rum and blends in old rums from Jamaica (15 - 20 yrs.) This end result finishes like sweet nectar but also adapts beautifully to classic cocktails made with dark rum such as the Mai Tai or Daiquiri.

During his time in Scotland, Charles Edward Stuart would carry with him a mysterious draught, from which he would drink a few drops every day. Nobody knew for certain what this formula was; only that it had been created by the Royal Apothecary. The apothecary would have imbued the drink with protective properties. He must have chosen Cloves - a dried flower bud of an Indonesian tree. This aromatic spice is still used for its powerful analgesic properties. Only the most prized spices would have been used. Many are convinced that saffron was the main ingredient. Not only was it renowned for its medical and sedative properties, but it would also have given the drink its rich golden colour.
