Fifteen years in virgin oak has resulted in a rather cask forward profile, with aromas of toasted hazelnuts and milk chocolate opening up on the nose, followed by grilled honeycomb, vanilla sponge cake and hints of fresh pineapple and crisp green apple. The palate is initially rich and sweet, with notes of butterscotch, salted caramel and drizzles of heather honey, followed by vanilla and treacle. Palate - Continuous gentle waves of dry peat lap upon the taste buds but are balanced by a sweet malt middle and the most hesitant of vanillas.
Finish - Long and peaty, the shy vanilla now begins to show as the oak adds a certain dryness. Comment A gentle giant.
